Celebrating the Taste of Harmony The GoodLife asked Claudio from Ciao Bella about his background and how it had inspired his cooking.
Good food brings people and cultures together, the flavoures stimulate and relax your senses.
Life stops at lunch time in Sicily as a family gathers around the kitchen table.
The best food in Sicily comes from the sea, my Mother would go to the market in Catania and buy fresh local produce.
We enjoyed specialities such as spaghetti ai ricci DI mare spaghetti with sea urchin roe and octopus salad which happen to be my favourite dishes.
Sarde Beccafico from Ciao Bella 1.5 kg fresh sardines basil 100gr sultanas parsley 100gr pinenuts olive oil 200gr breadcrumbs grated pecorino Preparation Clean and butterfly sardines.
Place breadcrumbs in a bowl with finely cut pinenuts, sultanas, parsley and basil.
Add pecorino, olive oil and mix with a touch of salt and pepper until it forms a paste.
Place a spoonful of breadcrumb mix in between 2 sardine fillets then dip into egg mix and breadcrumbs.
Fry in pan with olive oil.
