Seafood Saganaki from Daveys Ingredients 120gm Blue eye 4 rings of calamari 150gm Kefalgravera 2 fresh NZ mussels Saganaki cheese 50mls oil 2 large king prawns tsp garlic 2 prawn cutlets Splash of white wine 2 large sea scallops Squeeze fresh lemon juice Method Dust all ingredients lightly in flour and set aside for cooking Heat frying pan for cooking of seafood and add oil when hot.
Start first by cooking off fish and large prawns, once they are half cooked add the rest of the seafood and gently fry.
Now heat second pan and add a little oil once hot for the Saganaki.
Place cheese in pan and fry until golden brown, then turn and do the same to the other side until cheese is melted through.
Back to the seafood.
Now the seafood should be cooked through, add garlic and cook a second then deglaze with white wine and lemon.
Reduce liquid by half and season Serve with melted cheese enjoy.
