64 good life, february - march, april 2011 Mini Blue Vein and Smoked Salmon Scones 300g good blue vein cheese 25g smoked salmon sliced Fresh dill 50g sour cream 50g plain greek yogurt Squeeze lemon juice Pinch salt Scone base Use your favourite basic scone recipe to make approx 1 dz medium sized scones.
This will convert into approx 30 mini scones.
Make basic scone recipe, do not add sugar or icing sugar- pinch of salt instead.
Rub in the blue vein cheese Knead make into ball and then turn aout to rest Flatten out to 20mm in height and cut 40mm circles or squares.
Place on floured tray.
Bake 15 -20 minutes in 180 oc oven until light brown Leave to rest cut scones in to be served when still warm Cr me Fraiche Combine sour cream, greek yogurt a squeeze of lemon and a pinch of salt, refrigerate while scones are in oven can be done the night before Put scone s on serving tray Make small rosette with smoked salmon and place on each scone teaspoon of cr me fraiche on to salmon and finish with small sprig of fresh dill.

What is your favourite dish It is hard to name one, but good fresh pasta with braised meat, pickled veg and quality cheese is the pick for me.
First memory of enjoying different flavours Hard to remember.My mum wasn t much of a cook, so we grew up with very simple food.
When I started my apprenticeship a whole new world opened up for me.
I got to taste foods that were totally new to me.
It was a great experience, one which I have never forgotten and I'm always looking for different ingredients to try.
