It took me years to master my oven at home.
first you have to understand that every oven will behave differently some will heat quicker than others, some the dome will heat quicker than the floor and others will have hot spots that can make cooking tricky.
Six simple steps to sumptuous wood fire cooking 1.
Only ever light your fire on one side of the oven and allow the heat of the flame to heat the floor and the dome, some say to light the fire in the center and then shift the fire to the side when ready to cook, this will cause hot spots on the floor making cooking difficult 2.
Build the biggest fire you can safely and allow it to burn until it leaves a bed of coals then use the longest wood your oven will accommodate, this will give you an even flame across the oven.

Remeber the heat in the floor and the dome are for cooking and the flame is for browning so you dont need a huge flame where as you good heat in the floo adn the dome to cook the pizzas 4.
Slice your pizza toppings as thin as you can and do not over top your pizzas to ensure they cook in the short time it takes in a wood oven 5.
Use minimal yeast in your dough and try using ice water when preparing your batch which will retard the yeast.
the yeast will then actiavte in the oven giving you an authentic light thin, hollow puffy crust 6.
